Our EVOO comes from an ancient oil mill, located on Lake Trasimeno (in the central Italian region called Umbria). We hand-pick and cold-press Italian olives exclusively, and the process is still carried out according to the ancient processing techniques that guarantee a very high quality product. The oil is green with some golden glints. Its bouquet is of fresh vegetables, almonds, fresh flowers and fruit. The taste is fruity, delicate and harmonious. These characteristics are excellent to enhance the flavor and taste of white and black truffles.
