    Petra 3 flour has worked really well for me for making a nice tasty, elastic neopolitan pizza dough. It is stone ground, not whole wheat, but does retain some of the bran. It adds a very enjoyable depth to the flavor profile (plus some fiber). It is well suited to extended cold proofing, which is what I do with my dough. It also benefits from a little lower heat and a little longer cooking time which works well since I am using my standard stove oven with a baking steel. I did get some information from the company site that recommends letting the dough rest for 20 min when dough is just roughly mixed to absorb water. It did help. Then continue and let rest for 20 min after dough is smooth and elastic. Then proceed as usual. I love my pizza so much I can't enjoy restaurant pizza anymore. But then I don't live in a great pizza town ;>).
