These baby artichokes are grown on organic certified farms that surround the Pavoncelli estate and are harvested at the peak of ripeness. The artichokes are blanched and processed within 24 hours of harvesting, which helps them maintain the crunchiness and flavor of the vegetable. The artichokes are seasoned with a little parsley and basil, then jarred or packaged in a sunflower/olive oil blend.
