These egg tagliatini (aka Tagliolini outside of Tuscany) are an exceptional choice with porcini mushroom or truffles. Cook in lots of salt water, drain, and finish in a pan with butter and shaved white truffles or just simply with some aged grated Parmigiano Reggiano cheese.
